Fortune Cookies with Coffee for Valentine’s Day

Ingredients (for 10 persons)

  • 25 ml ristretto
  • 75 g marzipan
  • 125 g egg white
  • 125 g butter
  • 125 g icing sugar
  • 125 g plain flour
  • 1/2 vanilla pod
  • 1 coffee spoon of ground coffee
  • Messages on small paper strips

Preparation

  • Scrape out the seeds from the vanilla pod.
  • Combine the marzipan with the vanilla seeds, ground coffee and ristretto and knead the mixture together.
  • Sieve together the flour and icing sugar and add to the mixture.
  • Melt the butter and add it along with the egg white.
  • Stir the mixture slowly with a whisk or food processor to form a viscous dough.
  • Cover the dough with cling wrap and chill in the refrigerator for a few hours.
  • Take the chilled dough out of the refrigerator and, using a tablespoon, form it into little flat discs.
  • Place the discs of dough on a baking tray, leaving enough space between them.
  • Bake at 180° until the cookies have some colour.
  • Remove the cookies from the tray with a cake slice and place a paper message in the centre of each.
  • On a board, form the cookies into fortune cookie shapes. To do this, fold each into a half-moon shape and then curve in the middle over the edge of a bowl.
